– Get the tortillas of your choice: small, large, regular, whole-grain, or gluten-free. You can make one, or several pizzas.
– If you do not like cream cheese or are dairy-intolerant, you can replace that layer with a brushing of olive oil. The advantage of the cream cheese layer is that it protects the tortilla.
– The cooked sausage and/or the pepperoni can be skipped as well and replaced with other cooked meats or with added vegetables (avoid juicy ones, such as fresh tomatoes, as they will make your tortillas soggy).
– You can leave the recipe as simple as it is, or be creative by adding: olives, artichoke hearts, sun-dried tomatoes, fresh parsley, capers, mushrooms, spices, etc., just make sure not to saturate your tortillas with juices.
